I’m going to have to try this, Richard. Our smoked turkey from Elgin was even better than last year’s, but the freezer is going to have a load of left-overs now, for far longer than I would like. One way around this would have been to, hell, invite some neighbors! But we get little enough time to have our daughters to ourselves, so Mike’s attitude to that kind of un-Yankee friendliness is “over my dead body.” Something will have to give next year, so your approach may well make the most sense.
These days, I don't cook on Thanksgiving, except to make pumpkin rolls. My son-in-law has taken on the bbq chores and he is quite good. Smoked and brined two turkeys. But I chat with their friends for a bit and then flee the household. Too many screaming kids. I go to Jim's, who also has two turkeys, one smoked and one traditional, and hang out with the young WOOFers. Then, after the holidays, I go the grocery store and buy one of the heavily discounted organic turkeys, break it down, freeze it, and pull it out over the year to pickle brine it. It works for me.
There is much to admire in your planning, here, Richard. I’m envious. It’s been twelve years since the young’un departed for sunny College Park, Md, and I feel I am only NOW starting to plan effectively for just two people.
